At this point, I don’t really follow recipes anymore.
I follow a mental checklist.
Every batch I make starts with the same three questions:

What’s my base?

How am I thickening it?
-
What flavor am I actually going for?
That’s the whole system.

For bases, I rotate between:

Ready-to-drink protein shakes when I’m lazy

Greek yogurt with a splash of milk when I want thickness

Blended cottage cheese when I want something close to gelato
For structure, I keep it minimal:

Instant pudding mix or
-
A small amount of xanthan or guar gum
Not both. Never both.
Flavor comes last. Protein powder, cocoa, fruit, extracts — whatever fits the mood.
I freeze it flat overnight, spin on Lite, add a splash of liquid, and re-spin. Sometimes twice. Sometimes once.
The moment I stopped treating protein ice cream like a chemistry experiment, it became sustainable.
Now it’s something I do every week without thinking about it.
That’s usually how you know a habit will last.
